BEGUN BHAJA (MY STYLE)

INGREDIENTS:
  1. Egg plant 1 Big one
  2. Haldi 1 tsp (turmeric powder)
  3. Red chilli powder 1 tsp
  4. Besan 2 tbsp (gram flour )
  5. Rice flour 2 tbsp
  6. Dhanya powder 1 tsp
  7. Salt as per taste
  8. Garam masala quater tsp
  9. Dried mango powder quater tsp
  10. Ajwain 1 tsp (caroom seeds )
  11. Zeera 1 tsp (cumin seeds )
METHOD:
  1. Cut egg plant in round slices and keep in salted water
  2. Now mix all masalas besan,rice flour,salt,garam masala,Dhanya powder,haldi powder ,red chilli powred,Dried mango powred,Carrom seeds,zeera
  3. Now take  slices one by one & dust this mixture well and shallow fry all from both sides on medium flames
  4. Serve this dish with dal and rice or dal roti as side dish or eat as snack

FISH FRY

INGREDIENTS:
  1. Fish 1 kg 
  2. 3 tbsp besan (gram flour)
  3. Red chilli flakes 1 tsp
  4. Ginger 1 tbsp 
  5. Garlic 1 tbsp
  6. Coriander seeds crushed finely 
  7. Kasuri methi 1 tbsp
  8. Ajwain 1tsp (carrom seeds)
  9. Haldi 1/3 tsp (turmeric)
  10. Lime juice 3 tbsp
  11. Salt as per taste 
  12. Zeera 1 tsp (cumin seeds) crushed 
  13. Oil for frying
METHOD:
  1. Wash fish add and add salt and turmeric to it and keep aside
  2. Now make paste of ginger and garlic with lime juice dont use water
  3. Now mix besan and all masalas in fish red chilli flakes,ginger and garlic paste,coriander seeds,cumin seeds,kasuri methi,salt,ajwain 
  4. In a wok fry fish pieces on mediun flames 
  5. When pieces turn brown and crispy take them out 
  6. serve with Green chutni as a snack or serve as side dish
  7. serve hot enjoy...........GOD BLESS

FRIED ONIONS RAITA

INGREDIENTS

  1. Curd 250 grams
  2. Onion 1 medium chopped
  3. Zeera 1tsp (cumin seeds)
  4. Rai  1/2 tsp (mustard seeds)
  5. Hing a pinch
  6. Haldi  1/4 tsp ( Turmeric)
  7. Green chilli 1 chopped
  8. Salt as per taste
  9. Red chilli powder 1/4 tsp

METHOD

  1. In a bowl  whip curd mix salt and red chilli powder keep aside
  2. Now take a pan heat oil add zeera ,rai when crackles add hing and onion  saute
  3. Now when onion turns translucent add haldi,chopped green chilli and fry 
  4. Add all  this in curd and mix well 
  5. Serve this with biryani and pulao........enjoy.....GOD BLESS

BROCCOLI,SHIMLA MIRCH,AALOO(BROCCOLI,BELL PEPPER AND POTATO)

INGREDIENTS:

  1. Broccoli 4oo gram
  2. Shimla mirch 1 (bell pepper any colour)
  3. Potatoes 4 small( cut as you like)
  4. Zeera 1 tsp (cumin seeds)
  5. Hing a pinch 
  6. Onion 1 medium chopped
  7. Tomato 1 medium chopped
  8. Ginger 1 inch grated/crushed 
  9. Garlic 1 tsp grated/crushed
  10. Red chilli powder 1 tsp
  11. Haldi powder 1/2 tsp
  12. Dhanya powder 1 tsp (coriander powder)
  13. Garam masala 1 tsp
  14. Green chillies 3 chopped
  15. Oil 1 tbsp

METHOD:

  1. Cut broccoli in florets and dip in warm salted water for 30 minutes,Now fry broccoli and potatoes till half done ,Take out keep aside
  2. Now add oil in a pan heat add zeera when crackles add hing ,Ginger,Garlic saute
  3. When raw smell ends ,Add onion fry till golden brown add tomato fry till it turns mushy ,Then add shimla mirch mix well
  4. Add masalas red chilli powder ,Haldi powder,Dhanya powder,Salt,Greenchillies mix all well
  5. Now add half cooked broccoli and potatoes and mix well
  6. Cover lid and cooked for 10 minutes  on medium flames 
  7. Finally add garam masala and mix switch off the stove 
  8. Serve with royi/paratha/poori.........enjoy

KALI DAL (URAD SPLIT)

INGREDIENTS:


  1. Kali dal 11/2 cup (split urad)
  2. Onion 1 medium chopped
  3. Ginger 1 tbsp chopped
  4. Salt as per taste
  5. Red chilli powder 1tsp
  6. Green chillies 3 chopped
  7. Kasuri methi 1 tbsp
  8. Garlic 3 cloves
  9. Zeera 1tsp (cumin seeds)
  10. Hing 1/3 tsp
  11. Dried red chillies 2
  12. Oil 1 tbsp

METHOD:

  1. Boil dal with salt,Onion half chopped,Ginger,Kasuri methi,Red chilli powder in pressure cooker 
  2. When boiled open & add green chillies and cook for other 5 minutes on low flames adding 1 cup water just cover no need for whistle
  3. Now in a frying pan heat oil ,Add zeera when crackles add dried red chillies ,Chopped garlic,Ginger ,Half onion fry it when turns golden brown add hing 
  4. Once done add this to dal and mix 
  5. Serve this with Plane rice/Roti/Naan..........enjoy...GOD BLESS
